On the Cforce 500 can the rider shift from low to high gear without stopping?

No..Never..on any CVT machine. Doing so will damage the transmission. There are no synchros, clutches or anything else there that can absorb the impact of a ration change while in motion. It can be as minimal as rounding dogs and/or teeth to bending or breaking shift forks.
