I have a 2021 Zforce 800 Trail with about 300 hrs on it so far. For some reason, i only can get up to 50mph at 5200 rpms. I've looked at videos/info online and fully accelerated it gets up to 60mph at 7000rpms. I changed the air filter so far but that's all I've changed. Any ideas on why that would be?

Are you running a windshield? And what's your elevation? Close to my house is our west mesa and it and the house are about 5400 ft. If I run mine without the front or rear windshield on a flat road, it will get about 68mph and just about 7K RPMs. Its not hitting the limiter yet but that's all it can do up here with the power loss..which is about 3% per thousand feet. If I was at or under 1000 feet...and had the stock 26" tires, I would have a better chance of hitting the rev limiter...which I hear is at 7750 RPM. I can put my windshields back in and it maxes-out about 59...62 or so down hill.

No windshield, and the terrain is mostly flat (1,300 ft).

Are we talking stock? Are these fly-by-wire?

If it won't run over 5200 rpms then I would suspect that throttle body is not opening up all the way. I would hook it up to a PDA and check the values coming from the TPS.

I would bring it in for warrantee service and have them do it.

Yeah the 800s are still cable-throttle so at your elevation with no windshield and on the flat...there is something wrong like doug80638 says. I'd take it in after checking the throttle cable adjustment.
