Looks good. Personally I would leave it alone for the first thousand miles or two just to get a feel of how it was designed and what it really needs for my application. Maybe go up one size on tires and maybe a preload adjustment.. but that's it for a while.

SO, I think my main trail system is going to be Uwharrie in NC. Take a peak at some videos from out there and tell me what ya think.

Oh I know, I have run their trails in jeeps. That's why I think I need some more belly clearance, The question is, how much. I can play the drivetrain safe with 30s  or I can get more meat with 32s.

Going to depend on how much power and reliability you are willing to loose. Me I would keep as much as possible and go up one size in tires and just invest in some aluminum belly armor. Need it anyway.

It will have plastic skids but they will break-up with enough impacts. Run it for a while..might as well get some use out of them. Although I put steel armor rock guards on the outer rocker panels on mine I still have the OE plastic center skids on mine. Been working just fine for me. But I do tend to avoid "boulder-walking".
