High vs. Low gear: when to use

The owner's manual is a little bit vague on this topic so I thought we could all hash it out here. When should I use low gear and when should I use high gear?  It seems on a flat surface at 25 mph there is about an 800 rpm difference between the two. Both have good power but of course low has more pull off the line. Obviously I'm new to CVT transmissions and just want to make sure I'm doing things correctly. Thanks!
