I am in the process of insulating the centre console for noise and heat and noticed a threaded hole in the shifter assembly. Anyone know if there should be a bolt in there or something?

No idea. Mine has it too. Probably for some other application on another machine like a switch of some kind.

So yours is open also, that's good to know. It's probably meant to be left open then. Just want to make sure it doesn't need to be closed up to keep dirt out.
I heard from another person that the hole is used for a pin bolt system that requires you to push down the brake pedal to engage reverse. It just seems weird that it is not capped off.

You can always stick a piece of metal tape or duct tape over it but I think the bottom is open so it might not do much.
